Schnitz is a family love affair that was spawned in 1974 when Roman Dyduk learnt how to make schnitzels while working as a chef at a Jewish restaurant in Acland St, St Kilda (the Red Rock Restaurant for those of you old enough to remember).

Since these humble beginnings Roman’s passion for cooking and experimenting with healthy food concepts has led him to open 13 various cafés, restaurants and smorgasbord diners throughout Melbourne before finally creating the Schnitz concept. Here is his story…
