Schnitz is a family love affair that was spawned in 1974 when Roman Dyduk learnt how to make schnitzels while working as a chef at a Jewish restaurant in Acland St, St Kilda (the Red Rock Restaurant for those of you old enough to remember).

Since these humble beginnings Roman�s passion for cooking and experimenting with healthy food concepts has led him to open 13 various caf�s, restaurants and smorgasbord diners throughout Melbourne before finally creating the Schnitz concept. Here is his story�
